Italian gastrotrip: how to make pesto?

The third episode of our video series was made in a beautiful farmhouse. The house is hidden in the hills above Levanto and is surrounded by a large garden, fruit trees, olives and flowers. From the terrace, you can enjoy a wonderful view of the hills and a couple of tiny ligurian villages. There are some apartments for rent, I recommend them for couples, families and also for those planning a honeymoon. An old chapel also belongs to the farm so you can even get married here. It's an idyllic, quiet place, and the beach is only a few minutes away by car. Luckily, we had some time to enjoy the April sunshine in the garden and play with the friendly dog of our hosts. We felt in paradise.

Then, of course, work had to be done, and our chef Alberto, and Zsófi started cooking. First, they prepared pansotti with walnut sauce then trofie al pesto. Both sauces were made with a traditional method, in the mortar, partly because a small part of the mixer was missing. Alberto admitted that during busy weekdays they also use the mixer as it is quicker. These dishes are often prepared in ligurian homes.
